Reboiling water twice: Here is what actually happens in your kettle

The idea that reboiling water turns it into something toxic has bounced around social media for years. A peer-reviewed study published in July 2025 in Scientific Reports finally puts a number on the chemistry, and the picture it paints depends less on how many times you boil than on what came out of the tap in the first place.

Researchers in Gorgan, Iran, measured how nitrate levels shift when tap water is boiled repeatedly. Their regression analysis found a rise of about 0.75 mg/L of nitrate per boiling cycle, a modest increase that is easy to overlook in a single cup of tea but adds up as the volume in the kettle shrinks.

The mechanism is not mysterious. Boiling drives water off as steam, and everything dissolved in the water, from mineral salts to nitrate, stays behind. When the same water is heated again, the ratio of solutes to water climbs slightly with each round.

What the new study actually measured

The team, led by Abdolhalim Rajabi and colleagues, tested 30 water samples over five boiling cycles that shrank the volume from 1500 mL down to 500 mL. Tap water in the study started at just 0.56 mg/L of nitrate, well below the US Environmental Protection Agency limit of 10 mg/L. After five aggressive rounds the tap samples showed an 8.2-fold concentration bump, which still left them below the federal ceiling.

The alarming numbers in the paper come from a different scenario. When the researchers ran the same experiment on synthetic solutions spiked with 50 mg/L of nitrate, already five times the EPA limit before any heating, the modeled Hazard Quotient rose above 1 across every age group. In other words, the study is really a warning about what happens when boiling amplifies water that was contaminated to begin with, not a verdict on the average kitchen kettle.

Where the myth comes from

Viral posts often claim that reboiling converts harmless compounds into carcinogens or concentrates arsenic, fluoride and nitrate to dangerous levels. The fact-checkers at Snopes have looked at the underlying chemistry and concluded that the toxicity claim does not hold for normal municipal water. Reaching harmful levels of arsenic through concentration alone would require boiling thousands of gallons down to a single cup, a scenario no household kettle produces.

Science writer Anne Helmenstine reaches a similar conclusion in her review for Science Notes. "Generally, there is no health risk if you boil water, let it cool, and reboil it," she writes, noting that the practical concern in most kitchens is superheating and burn risk, not chemistry.

When the source water actually matters

The story changes for households on private wells or in regions with elevated baseline nitrate, arsenic or lead. In those settings, boiling does not remove the contaminants and can push their concentration higher as the water evaporates. Reboiling water that already exceeds safety limits is not a way to purify it.

Infants under six months are the group most sensitive to nitrate exposure. The EPA warns that high nitrate levels can trigger methemoglobinemia, sometimes called blue-baby syndrome, by interfering with how blood carries oxygen. Families relying on well water should have it tested rather than assume boiling makes it safer.

For everyone else, the practical takeaway from the 2025 paper and the expert consensus around it is straightforward. Reheating the kettle once or twice with standard tap water is not going to poison you. The quality of what you pour in matters far more than how many times it reaches a rolling boil.
