Pull a forgotten chocolate bar out of the cupboard, unwrap it and find a chalky, whitish film on the surface, and the first instinct is usually to throw it out. It looks like mold or a sign the chocolate has spoiled. It is neither. Two different kinds of white film
Food scientists distinguish between two versions, and you can usually tell them apart by touch. Iowa State University Extension describes fat bloom as the result of heat softening the cocoa butter, which then separates and rises to the surface, leaving grey or white streaking that "feels smooth" under a finger.
Sugar bloom is the moisture version. When chocolate sits in a humid spot or moves between cold and warm air, sugar particles at the surface absorb water. When a bar is warmed and cooled repeatedly, the fat rearranges into the more stable Form VI, which melts higher, at 35.5°C (95.9°F). That transition is what the review links directly to visible fat bloom on the surface.
The storage conditions that prevent it
Both authorities point to the same fix. Iowa State University Extension recommends storing chocolate at room temperature between 65°F and 70°F, with a relative humidity below 50 to 55 percent, so the cocoa butter and cocoa solids stay stable.
The refrigerator is not the safe backup most people assume. According to the extension guide, chilling chocolate can cause it to "absorb odors from other foods and/or develop a moist surface when brought back to room temperature resulting in bloom." If a hot, humid kitchen leaves no other option, the same guide advises wrapping the bar tightly first.
Kept under those conditions, dark chocolate holds up for at least two years, milk chocolate for about a year and white chocolate for around six months, the Iowa State University Extension guide notes. A bar that shows bloom well before then has usually spent time somewhere too warm, too humid, or both.
