Fresh berries can spoil surprisingly fast, but a simple vinegar wash and careful storage may help them stay fresh for longer.

Throwing away food is frustrating, especially when it looked perfectly fresh at the store just days earlier. Berries are among those foods that can go from tempting to unusable surprisingly fast.

In its guidance on storing fresh berries, Southern Living highlights moisture control as particularly important. The publication also describes a diluted white vinegar method that can be used before refrigeration.

Moisture matters

Berries naturally contain plenty of moisture and have delicate surfaces. Combined with mold spores and bacteria, those conditions can contribute to rapid spoilage.

That means extending freshness is not simply about what you wash the fruit with. What happens afterwards also matters.

Southern Living recommends allowing washed berries to dry completely in a single layer. They can then be transferred to a shallow container lined with paper towels to help manage excess moisture.

Before refrigeration

Any berries that are already moldy or badly overripe should first be discarded. Only then does vinegar become part of the process.

The method described by Southern Living uses one part white vinegar to three parts water. The berries are soaked for five to 10 minutes before being gently rinsed with clean water.

The diluted vinegar is intended to reduce mold spores and bacteria on the fruit's surface that can contribute to spoilage.

One final detail

Once completely dry, different varieties of berries should be stored separately because they do not necessarily ripen or deteriorate at the same rate.

Southern Living also advises against sealing the storage container completely. Leaving the lid slightly open allows excess moisture to escape.

No storage technique can keep fresh fruit good indefinitely. But sorting berries carefully, reducing surface contamination and controlling moisture can give them better conditions in the refrigerator.
