Nutrition experts say the way you prepare zucchini can make a real difference to its nutritional value.

Even small changes to your daily diet can make a meaningful difference over time. Adding an extra vegetable to your plate may seem insignificant, but it can help provide important nutrients the body needs to stay healthy.

According to the Spanish Nutrition Foundation (Fundación Española de la Nutrición, FEN), as reported by elEconomista.es, zucchini is one vegetable that deserves more attention. Low in calories yet rich in vitamins, minerals, fibre and water, it can be a valuable addition to a balanced diet.

Why preparation matters

Many of zucchini's beneficial soluble fibres, known as mucilage, are found around the seeds. These fibres help support healthy digestion and contribute to a balanced gut microbiome.

Nutrition experts recommend lightly steaming, briefly blanching or eating zucchini raw to preserve as many nutrients as possible. Prolonged cooking may reduce levels of vitamin C and several B vitamins.

More than low calories

Zucchini provides nutrients that support several important functions in the body, including:

  • Supporting the normal function of the immune system.
  • Contributing to normal vision through vitamin A.
  • Providing antioxidants that help protect cells from oxidative stress.
  • Supporting normal heart function through its potassium and fibre content.

Not suitable for everyone

Although zucchini is a healthy choice for most people, those with reduced kidney function or individuals taking medication that affects potassium levels should be mindful of consuming large amounts.

As part of a varied and balanced diet, zucchini offers a simple way to increase your intake of beneficial nutrients, particularly when it is prepared gently to help retain its nutritional value.
