Spinach is one of the most oxalate-rich foods on the plate, and a large daily serving may quietly raise the risk of calcium oxalate kidney stones.

Researchers writing in the American Journal of Physiology-Renal Physiology reported that in susceptible men, even a 5 mg per day increase in urinary oxalate excretion doubled kidney stone risk.

The National Kidney Foundation lists spinach among the high-oxalate foods to limit for people prone to calcium oxalate stones, alongside rhubarb, beets, Swiss chard, chocolate and nuts. Calcium oxalate is by far the most common stone type in the United States.

Why spinach sits at the top of the list

Oxalate is a natural compound in many plants. In the gut, it can bind calcium and form crystals that end up in the urine, where they can grow into stones. The more oxalate the body absorbs, the higher the load reaching the kidneys.

Spinach is unusually dense in it. The 2018 review by Mitchell and colleagues, published in the American Journal of Physiology-Renal Physiology, noted that a normal portion of spinach of 50 to 100 grams delivers roughly 500 to 1,000 mg of dietary oxalate.

Two large handfuls of raw baby spinach easily fall in that range, which is a common amount for a green smoothie or a big salad.

For context, only a small fraction of that oxalate is absorbed, typically around 5 to 10 percent. But in people who already form stones, even small shifts in urinary oxalate matter. That is the finding behind the doubled risk figure.

How cooking changes the picture

Preparation method makes a real difference. In a 2005 study in the Journal of Agricultural and Food Chemistry, Weiwen Chai and Michael Liebman reported that boiling reduced soluble oxalate content in vegetables by 30 to 87 percent, and boiling was more effective than steaming, which cut soluble oxalate by 5 to 53 percent.

The oxalate leaches into the cooking water, so pouring the water off is the point of the exercise. A pan of wilted spinach starts from a much lower oxalate base than the same weight tossed into a blender.

What the guidelines suggest

The National Kidney Foundation recommends pairing high-oxalate foods with calcium-rich foods at the same meal, because the two bind in the stomach and intestines before reaching the kidneys. Yogurt with berries, or spinach cooked with a splash of milk or cheese, follows that logic.

Fluid intake is the other lever. The Foundation advises 2 to 3 quarts of liquid, or 8 to 12 cups, per day to keep urine dilute enough that crystals are less likely to form.

The U.S. National Institute of Diabetes and Digestive and Kidney Diseases lists spinach among the foods to limit for people who have had calcium oxalate stones, together with nuts, peanuts, rhubarb and wheat bran.

Who actually needs to worry

Most people who eat spinach occasionally are not at meaningful risk. The concern is concentrated among those who have already passed a stone, have a family history, or drink very little water.
