The World Health Organization links about 1.7 million deaths each year to eating too much sodium. Yet the average adult still puts away more than double the recommended daily limit.
Blood pressure is the effect most people know. But a review published in March 2025 in Biomedicines lays out how chronic high salt intake damages the body well beyond hypertension, reaching bones, kidneys and the stomach lining.
How much salt is too much
WHO recommends adults keep sodium below 2,000 mg a day, the equivalent of less than 5 grams of salt. That is roughly a level teaspoon.
The global average was 4,278 mg of sodium per day in 2021, about 11 grams of salt. More than twice the ceiling.

The American Heart Association is stricter. It sets its ceiling at 2,300 mg a day and calls 1,500 mg the ideal target for most adults.
Americans typically eat over 3,400 mg a day. More than 70 percent of that comes from packaged, prepared and restaurant foods, not the shaker.
The bones lose calcium in the process
The 2025 review notes that sustained high sodium intake affects the skeleton through the kidneys. When the body flushes out extra sodium, it drags calcium along with it in the urine.
A fact sheet from the Pan American Health Organization describes the same mechanism in plain terms. Sodium chloride "elevates urinary calcium excretion" and can trigger responses that lead to increased bone remodeling and bone loss.

Sodium and calcium share transport paths in the kidney tubules. Where sodium goes, some calcium follows. Over years, that steady leak of calcium can chip away at bone density.
Kidneys under constant strain
The kidneys are the body's salt filter. The 2025 review reports that a chronically high sodium load promotes albuminuria, oxidative stress, arteriolar damage and interstitial fibrosis.
Over the long run, that combination can push the organ toward chronic and even end-stage kidney disease.
The mechanism runs through the blood vessels too. Excess sodium suppresses nitric oxide, a molecule that helps blood vessels relax, which stiffens the small arteries feeding the kidney and drives up oxidative stress inside the tissue.

A separate link to stomach cancer
The salt-cancer connection is not really about the shaker. The World Cancer Research Fund concluded there is strong evidence that certain high-salt foods are a cause of stomach cancer. Salted meat and fish and salt-preserved vegetables are on that list.
Two mechanisms are at work. Salt damages the stomach lining and produces lesions that can, over time, develop into cancer.
It also amplifies the damage done by Helicobacter pylori, a bacterial infection that is itself a major stomach-cancer risk factor. Most of the strongest evidence comes from Asia, where salt-preserved foods are a bigger part of the everyday diet.
Three habits that cut hidden sodium
Most of the salt in a Western diet is already in the food when you buy it. That makes the label the most useful tool in the kitchen.

Check the "sodium" line on the Nutrition Facts panel and compare products in the same category. Bread, breakfast cereal, canned soup, deli meat and pizza tend to be the biggest silent contributors.
Compare per serving and per 100 grams, since serving sizes on the pack can be smaller than a realistic portion.
Cooking more meals from raw ingredients gives you direct control over how much salt goes in. Eating fewer restaurant and takeout meals removes another hidden source.
Anyone with high blood pressure, kidney disease or a family history of osteoporosis should talk to a doctor about a specific daily target rather than aiming at a generic number.
